My son hates eating school provided lunch. He brings lunch box everyday. I need to have some good ideas to prepare lunch that are somewhat healthy as well. I am sick of making sandwiches that my son is also sick of eating. A good friend of mine introduced me some ideas and recipes and I tried some of them. they are very easy to make and delicious. My son loves those lunch boxes too.
1. Quiche:- Crab (by Dune 8/9/08)
You need:
1 Pastry shell. (9 inch partially baked)
1T. Butter.
2T. Shallots. (minced)
1C. Crab-meat.
1T. Flour.
1½C. Swiss cheese (shredded/divided)
3 Eggs.
1C. Half and half.
½t Salt.
Dash white pepper.
Dash nutmeg.
Parsley. (chopped)
Have a 9-inch pastry shell partially baked.
Then:
Sauté shallots in butter until tender, about 2 minutes, mix with crab-meat and flour and set aside.
Sprinkle ¾ cup the cheese in the pie shell, then spread with crab mixture. Sprinkle with remaining ¾ cup of cheese.
Beat eggs, cream, salt, pepper, nutmeg, and parsley until mixed.
Pour into shell.
Bake for 25 to 30 minutes at 350 degrees.
Serves 6 to 8.
2. Whatever you’re making for dinner, make extra and take leftovers at least a couple times a week.
3. Buy a bag of boneless/skinless chicken breast, you can do so much with them. Dice one up and cook in some heated olive oil and garlic, when the pink is gone add in any veggies you like, prepare some al dente pasta, mix that in, toss and heat through. You can do this the night before.
4. Dice up the chicken and when the pink is gone add in some taco seasoning and have that on a tortilla, take along any chopped veggies you like and add those when you eat it.
5. Tortilla chips and salsa
6. Chicken and rice (I used Knorr chicken-flavored rice in packets with pre-cooked chicken from a packet stirred in–way easy to cook, and it makes enough food for 2-3 days, costs under $6 for all of it)
For sides, try fresh and dried fruit, pretzels, etc., for variety.
